Roast new potatoes and Persillade

This is an absolute crowd pleaser and always seems to steal the show at dinner parties, it's so simple yet so delicious. serve instead of roast potatoes or a lovely garnish.



Serves 4


Ingredients


750 new potatoes, halved

salt and pepper

50ml olive oil


Persillade

20g chopped parsley

1 lemon zested

1 garlic clove minced

1 banana shallot finely chopped



Method


  1. preheat oven at 200C or 180C fan

  2. place potatoes, olive oil, salt and pepper in an oven proof dish and cook for 40-50 minutes, stirring occasionally.

  3. Remove the potatoes from the oven when they are nice and golden

  4. For the Persillade mix all the ingredients in a bowl, until well combined.

  5. Stir the Persillade through the potatoes and squeeze the lemon over them. making sure the potatoes are evenly coated

  6. Taste for salt and enjoy!
