This is an absolute crowd pleaser and always seems to steal the show at dinner parties, it's so simple yet so delicious. serve instead of roast potatoes or a lovely garnish.
Serves 4
Ingredients
750 new potatoes, halved
salt and pepper
50ml olive oil
Persillade
20g chopped parsley
1 lemon zested
1 garlic clove minced
1 banana shallot finely chopped
Method
preheat oven at 200C or 180C fan
place potatoes, olive oil, salt and pepper in an oven proof dish and cook for 40-50 minutes, stirring occasionally.
Remove the potatoes from the oven when they are nice and golden
For the Persillade mix all the ingredients in a bowl, until well combined.
Stir the Persillade through the potatoes and squeeze the lemon over them. making sure the potatoes are evenly coated
Taste for salt and enjoy!
