Greek Salad


Nothing pleases me more than a fresh, crisp Greek salad on a hot summers day. If you've been to Greece or Cyprus before, then I'm sure you've had one. I remember having this on a family holiday in Cyprus and falling in love with it.


Greek salad also known "Horiatiki" translates to village salad. which in other words means a simple dish, made with high quality ingredients, allowing the produce to talk to for itself.


This is healthy, quick and easy to make! Whip this up as a light lunch, or as a side with some grilled meat or fish.

Ingredients


4 vine tomatoes or 20 cherry tomatoes

Half a red onion, thinly sliced

1 cucumber, deseeded and chopped in 2cm slices

1 garlic clove crushed

10 kalamata olives

100g Feta, roughly broken up

100ml olive oil

2 tbsp red wine vinegar

1stp dried oregano

Salt and pepper


Method


1. Place all the ingredients apart from the feta in a mixing bowl and taste for seasoning.

2. Crumble the feta on top and serve.
